Strawberries & Cream Open Faced Sandwiches
I honestly wanted to make smores, but was trying to think of a healthier dessert. These seemed like a great semi-healthy alternative. As you can see there's not much to the recipe or ingredients, so make sure to use quality ingredients that will really sine. That means no canned whip cream (unless it's late and you're tired ;)
- Strawberries (24 small-medium)
- Heavy Cream (3/4 cup)
- Butter Waffle Crisps (or Graham Crackers, etc.) (24)
- Vanilla Extract (1 tsp (or to taste))
- Sugar (1 tsp)
Slice off green tops of your strawberries.
You really don't want huge strawberries, but nice small-medium.
Slice up the strawberries.
There should be about 6-8 slices per strawberry, about 1/3 cm thick.
Get your vanilla, sugar, and cream out.
(The sugar is optional, but does help with the thickening of the cream)
Combine the three in a large bowl. This bowl was a little small and ended up making a mess.
(If you're whipping by hand, put your bowl in the freezer along with the cream beforehand. The low temperature will help it to thicken)
Start whipping with your electric beater or whisk.
(I've done this by whisk quite a few times, expect to be working for 10-20 minutes.
Whip it until it looks like this and is forming mountains.
(This will happen almost suddenly at one point, so don't get discouraged if you're whisking by hand)
Lay out your waffle butter crisps, cookies, or graham crackers that you've chosen.
Using a regular sized spoon put down a nice pillow or bed for your strawberry.
Taking one whole strawberry at a time place one side down and then sort of fan it out.
If you do your sandwiches open faced the red of the strawberry looks great!
