Stuffed eggplant IOI
a mixture of ground meat,garlic,onion and parsley stuffed inside eggplants. The taste of lime juice and flavor of saffron makes this dish unbelievably DELICIOUS!!:-) cook it and don't listen to me! haha^^
- ground meat (200g)
- eggplants (4 long)
- tomato (2 big size)
- parsley (100g)
- mushroom (100g)
- tomato paste (3 tablespoons)
- onion (1 medium size)
- garlic (5 cloves)
- salt,pepper,turmeric (1 teaspoon each)
- saffron (1 teaspoon )
chop the parsley, mushroom, and onion
peel and cut the tomatoes into small pieces.
keep some of the softer parts to stuff into the eggplants in the end
cut garlic into long cuts
fry them a bit in a fry pan and put them aside
fry chopped onion
add ground meat and mushroom
add tomato and parsely
add t2 tablespoon of tomato paste,
salt,pepper,turmeric and pour 1 cup of water
put the lid and let it cook on low fire for about 20 minutes
add fried garlic and the rest of tomato
peel the eggplants and fry them
make a shallow cut in the bellies of the eggplants,put them in a fry pan and stuff them with the mixture.
pour half a cup of water mixed with one tablespoon of tomato paste
put the lid on and cook for about 15 minutes
