Stuffed paprika & eggplant ( DOLME )
A mixture of ground meat, rice, herbs, split peas with the taste of saffron and lime juice stuffed into colorful paprika and eggplant!
- ground meat (250g)
- onion (2 small size)
- paprika (3 big size)
- eggplant (1 big and fat)
- lime (1)
- rice (100g)
- split peas (50g)
- tomatopaste (2 tablespoons)
- herbs(parsley,mint,oregeno,green onion) (1 cup (chopped))
- salt,pepper,sugar,turmeric (1 teaspoon or more)
- saffron (1teaspoon mixed with 2 tablespoons of boiled water)
chop the onions and fry in a pan till golden
fry the herbs for about 5 minutes
add ground meat to the onion and fry till the color changes
add 2 cups of water
add split peas
add lime juice
add salt,pepper and sugar.
let it cook on low fire for about 30 minutes till the rice and peas are cooked
empty the paprika and eggplant(you can peel the eggplant if the skin is too thick!)
stuff the paprika and eggplant and put them in a deep pot
add the rest of the mixture around the paprika and eggplant.add one more cup of water
put the lid on and steam for about 20 minutes
