Superfood scrambled eggs

Pod*, a purveyor of breakfast and lunch snacks in the UK serves this. I was amazed at how such a delicious take on scrambled eggs, can feel so showy and flavourful, yet be so easy so easy to make, so here's my take on it, since I started making it at home. This is great to make to for more people for breakfast, for lunch - just multiply the ingredients accordingly. * http://www.podfood.co.uk
- Spinach (one handful)
- Eggs (2-3)
- Chilli (One whole one, chopped)
- Cherry Tomatoes (3-5)
- Feta cheese (50-70 grams)
- Sunflower seeds (1-2 teaspoons)
- Granary bread (Two slices, toasted)
First, chop the spinach up, into strips about an 2 inches wide
Halve the cherry tomatoes, chop the feta into cubes and chop the chilli.
Crack the eggs into a measuring jug, and mix with a fork (add salt and pepper to taste)
Add a splash of oil to a frying pan, throw the spinach in, and stir it around to give it a good oil coating.
After about 3 minutes of heating, add the chilli and tomatoes.
When the tomatoes are no longer firm, add the egg, and begin moving the mixture, as you would with normal scrambled eggs.
Add the feta after a couple of minutes, then stir it around, so it starts to soften, and mingle with the eggs.
Once it starts to look like this, you're pretty much done.
Told you it was easy.
Serve on top of two slices of buttered toast, and sprinkle the sun flower seeds over the scrambled eggs once on the toast.
