Sweet Potato Cakes
In Japan there is a cake called 'Sweet Potato', but in Europe you can't find very good sweet potatoes, so I made with regular potatoes. You won't notice the difference unless someone tells you. Mine came out rather flat because I used Nicola potatoes. Better to use more starchy potatoes.
- Potatoes (200g)
- Butter (20g)
- Sugar (70g)
- Cream (2 to 3 tbsp)
- Egg yolk (1 and a bit)
- Flour (depends on consistency)
Boil the potatoes and mash
Mix all the ingredients together. Add flour to thicken the mixture. Form into half a rugby ball shapes, brush with egg yolk and bake.
