Tender Chicken With Sweet Tomatoes

Another variation adapted from Jamie Oliver. This one pot recipe is easy to prepare and so rewarding. Takes about 1.5 hours in the oven but is totally worth it! Looks, smells and tastes delicious! Good dish to serve when you've got guests!
- Chicken drumsticks/Legs (2)
- Basil (1 handful)
- Aromatic tomato on vine (1 (wedged))
- Chopped plum tomatoes (half a can)
- Garlic (6 cloves)
- Red chilli (1 (finely chopped))
Prepare your ingredients.
Preheat oven to 180°C.
Season chicken with sea salt and black pepper.
Toss in basil leaves and finely chopped stalks.
Add in all tomatoes.
Scatter garlic and finely chopped red chilli over. (Skip the chilli if you cannot take spice)
Drizzle olive oil.
Poke around and make sure tomatoes are underneath.
Pop it in the oven for 1.5hours. Halfway through cooking, turn tomatoes and chicken around.
Cook till skin is crisp and meat falls off bone easily. Serve with mashed potatoes. Alternatively, remove meat from bone and serve it with your favourite pasta!
