I have arranged my recipe in more healthy way by reducing the amount of sugar and jam than usual, but it's still perfectly delicious! I often bake it to welcome friends and family.
- egg (3 (150g))
- flour (150g)
- baking powder (1 tsp)
- butter (150g)
- sugar (130g)
- blueberry jam (3 tbsp)
- powdered sugar (2 tsp)
Line a cake baking tin with butter or oil. Preheat oven to 180 degree C.
Put the butter into a bowl, mix until it becomes creamy, then add sugar and mix very well until the mixture becomes a light creamy texture. Next slowly add the beaten eggs while continuing to mix well.
Sieve the flour and baking powder, and put into the bowl. Mix roughly using a spatula until the texture becomes smooth.
Put the mixture into the baking tin. Flatten the surface a little and bake for 35 min. Check whether it's cooked or not by pushing a stick into the centre. If nothing comes out on the stick, it's done. If not done, then bake for another 10 min but cover over with aluminium foil to avoid over baking.
Remove to a cooling rack to cool for a while. When cool enough to touch, take the cake out from the tin and continue cooling.
When the cake is completely cooled down, Cut the cake in half. Spread the blueberry jam on just one side. Finally, carefully marry the two halves together and it's done! Enjoy this delicious treat at tea time just like Queen Victoria!
