Zucchini and chicken salad
For a zippy and healthy meal!
- Chicken breast (skinless) (180g (or more if desired))
- Spinach (1/2 packet)
- Zucchini, thinly sliced (1/2 )
- Chopped pecans (1/4 cup)
- Grated parmesan (1T)
- Salt and ground pepper
- Olive oil (1T + 1T)
- Fresh lemon juice (1T)
- Cherry tomatoes (as desired)
Marinate zucchini in 1T olive oil, lemon juice, salt and pepper. Leave to stand while cooking chicken.
Heat 1T oil over medium and cook chicken till opaque throughout and golden brown on surface, 5-7 minutes each side.
Slice chicken and toss with pecans, parmesan, spinach, tomato and zucchini mixture.
